Red Beans And Rice
Vegetable cooking spray as needed
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green pepper
2 garlic cloves minced
2 cans red beans - (15 oz ea) drained
= (or substitute your favorite bean for
red beans)
1/2 pound fully-cooked low-fat turkey sausage cut 1/4 slices
1 can tomato sauce - (8 oz)
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
1/4 teaspoon hot pepper sauce
3 cups hot cooked rice
Hot pepper sauce (optional)

Coat Dutch oven with cooking spray and place over medium-high heat until hot. Add onion, celery, green pepper and garlic. Cook 2 to 3 minutes.
Add beans, sausage, tomato sauce, Worcestershire sauce, red pepper and pepper sauce. Reduce heat; cover and simmer 15 minutes. Serve beans with rice and pepper sauce.
