Quick Italian Spinach Pie
1 container Breakstone's or Knudsen lowfat
cottage cheese 2% milkfat - (16 oz)
1 package frozen chopped spinach - (10 oz) thawed, and
well drained
1 cup Kraft low-moisture part-skim
mozzarella cheese
4 eggs beaten
1 jar roasted red peppers - (7 oz) well drained,
and chopped
1/3 cup Kraft 100% grated Parmesan cheese
1 teaspoon dried oregano leaves
8 Servings
Mix all ingredients. Pour into a greased 9-inch pie plate. Bake at 350 degrees for 40 minutes or until center is set.
