Poached Pears Delight
5 small pears see * Note
3 1/2 cups water
2 tablespoons fresh lemon juice
2 teaspoons imitation rum flavor
1 teaspoon pure vanilla extract
1 1/4 teaspoons pure orange extract
Sugar substitute equal
to 2 1/2 tbspns sugar
5 Servings
* Note: Choose d'Anjou, Bartlett, or Bosc pears that are just underripe. The 5 pears for this recipe should total approximately 1 pound.
Pare, halve lengthwise, and core the pears; the total weight of the 10 halves will be approximately 11 ounces. Put prepared pear halves, water, and lemon juice in a saucepan. Bring to a boil, turn heat down, and let simmer gently 20 to 22 minutes or until pears are tender but firm.
Remove from heat. Lift pears out carefully with a spoon and place in a pint jar or bowl. Add all flavorings and sweetener to hot liquid; stir to blend well. Pour on top of pears. Cover tightly. Chill and store in refrigerator.
This recipe yields 5 servings. Serving size: 2 halves plus 3 to 4 tablespoons liquid.
