Pineapple Sundaes
1 1/2 cups pineapple chunks canned or fresh
1 1/2 cups mandarin oranges packed in own juice drained
2 tablespoons minced crystallized ginger
3 cups plain nonfat yogurt
2 teaspoons vanilla
2 teaspoons sugar
Minced crystallized ginger for garnish
6 Servings
Combine the pineapple, oranges, and ginger and mix well. Combine the yogurt, vanilla, and sugar.
In parfait glasses, layer the fruit and yogurt, ending with yogurt. Sprinkle with a little ginger to serve.
This recipe yields 6 servings. Serving size: 1/2 cup fruit with 1/2 cup yogurt.
