Italian Rice Medley

Ingredients: 

2 tablespoons olive oil
4 scallions minced
1 medium red pepper seeded, chopped
1 can artichokes packed in water - (14 oz) drained, chopped
1 tablespoon minced fresh basil
1 tablespoon minced fresh oregeno
1 tablespoon minced fresh Italian parsley
3 cups cooked long-grain rice
1 tablespoon balsamic vinegar

Yield: 

6 Servings

Method: 

Heat the oil in a medium skillet over medium-high heat. Add the scallions and red pepper and saute for 5 minutes.

Add the artichokes and herbs and saute for 3 minutes. Add the rice and vinegar and cook for 1 minute.

This recipe yields 6 servings. Serving size: 1/2 cup.
