Hot Summer Fruit Compote

Ingredients: 

4 peaches peeled, pitted,
and sliced
2 cups hulled strawberries
30 sweet cherries pitted, halved
2 pears peeled, cored,
and sliced
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons orange juice
1/2 teaspoon brandy extract

Yield: 

8 Servings

Method: 

Combine all ingredients in a large bowl; toss gently to coat. Spoon mixture into a 2-quart casserole.

Bake at 350 degrees for 15 minutes. Serve immediately.
