Grilled Halibut Steaks

Ingredients: 

4 halibut steaks - (5 oz ea) skin removed
Grated zest of 1 lemon
Juice of 1 lemon
1 tablespoon chopped fresh rosemary leaves
= (or 1 tspn crushed dried rosemary)
2 teaspoons fresh thyme leaves
= (or 1/2 tspn crushed dried thyme)
1/2 teaspoon fennel seeds
Freshly-ground black pepper to taste

Yield: 

4 Servings

Method: 

Light a grill or start a charcoal fire.

Rinse halibut steaks and pat dry. Place on a platter and sprinkle each with some of the lemon zest and juice.

In a small bowl, combine rosemary, thyme, fennel, and pepper. Sprinkle evenly over halibut steaks.

Grill 4 to 6 inches from source of heat for 4 to 5 minutes per side, turning once, until fish flakes easily when prodded with a fork. Transfer steaks to a serving plate and serve hot.

This recipe yields 4 servings.
