Granny Smith Applesauce
2 pounds firm Granny Smith apples
2 tablespoons fresh lemon juice
1 cup water
1/4 teaspoon ground cinnamon
Sugar substitute equal to 3 tbspns sugar

Pare apples very thin, preferably with a vegetable parer. Remove cores; cut apples into 8 to 12 slices, then into bite-sized pieces.
Measure 6 cups into a large heavy pot; add lemon juice and water; mix well. Bring to a boil; cover and cook gently until apples are very soft and tender.
Remove from heat; add cinnamon and sweetener; mix thoroughly with a wooden spoon (a metal spoon may darken the sauce). Pack into jars, cover, and store in refrigerator. Serve warm or chilled.
This recipe yields 3 cups. Serving size: 1/3 cup.
