Easiest Three-Cheese Fondue

Ingredients: 

1 tablespoon margarine
1/4 cup finely-chopped onion
2 garlic cloves minced
1 tablespoon all-purpose flour
3/4 cup reduced-fat (2%) milk
2 cups shredded mild or sharp Cheddar cheese (8 oz)
1 package cream cheese - (3 oz) cut into cubes
1/2 cup crumbled blue cheese - (2 oz)
1/8 teaspoon ground red pepper
4 drops hot pepper sauce - (to 6)
Breadsticks and assorted fresh vegetables for dipping

Yield: 

8 Servings

Method: 

Heat margarine in small saucepan over medium heat until melted. Add onion and garlic; cook and stir 2 to 3 minutes or until tender. Stir in flour; cook 2 minutes, stirring constantly.

Stir milk into saucepan; bring to a boil. Boil, stirring constantly, about 1 minute or until thickened. Reduce heat to low; add cheeses, stirring until melted. Stir in red pepper and pepper sauce. Pour fondue into serving dish. Serve with dippers.

This recipe yields 8 (3-tablespoon) servings.
