Curried Walnut Grain Burgers

Ingredients: 

2 eggs
1/3 cup plain yogurt
2 teaspoons Worcestershire sauce
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 1/3 cups cooked couscous
= (or brown rice)
1/2 cup finely chopped walnuts
1/2 cup grated carrot
1/2 cup minced green onions
1/3 cup fine dry plain bread crumbs
4 sesame seed hamburger buns
Honey mustard as needed
Thinly-sliced cucumber or apple for serving
Alfalfa sprouts for serving

Yield: 

4 Servings

Method: 

Combine eggs, yogurt, Worcestershire sauce, curry, salt and red pepper in large bowl; beat until blended. Stir in couscous, walnuts, carrot, green onions and bread crumbs. Shape into 4 (1-inch-thick) patties.

Coat grill rack with nonstick cooking spray; place rack on grill over medium-hot coals (350 to 400 degrees). Place burgers on rack and grill 5 to 6 minutes per side or until done.

Burgers may be broiled 4 inches from heat source for 5 to 6 minutes per side or until done.

Serve on buns with mustard, cucumber and sprouts.

This recipe yields 4 servings.
