Cool Radiatore With Melon
1/2 cup limeade concentrate
2 teaspoons canola oil
1 teaspoon chili powder
1 1/2 cups honeydew chunks
1 1/2 cups cantaloupe chunks
1 medium cucumber peeled, seeded,
and cut into 1/2 chunks
6 cups cooked radiatore pasta rinsed under
cold water

In a medium bowl, whisk together the limeade concentrate, oil, and chili powder. Add all remaining ingredients, toss well to coat with the dressing, and serve.
This recipe yields 6 servings. Serving size: 1 cup pasta with 1/2 cup fruit.
