Chicken Brown Rice Primavera
1 tablespoon oil
3/4 pound boneless skinless chicken breasts cut into strips
2 garlic cloves minced
1 1/2 cups chicken broth
1 cup broccoli flowerets
1/2 red pepper cut into strips
1/2 cup diagonally-sliced carrots
1/2 cup sliced yellow squash
1/4 teaspoon black pepper
1 1/2 cups uncooked Minute instant brown rice
1 ounce Kraft 100% grated Parmesan cheese
4 Servings
Heat oil in large skillet on medium-high heat. Add chicken and garlic; cook and stir until chicken is lightly browned.
Add broth, broccoli, red pepper, carrots, squash and black pepper. Bring to boil.
Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in cheese.
This recipe yields 4 servings.
