Chicken And Mushroom Soup

Ingredients: 

1 quart low-fat low-sodium chicken broth
1 tablespoon low-sodium soy sauce
1 cup sliced mushrooms stems removed
1 tablespoon minced scallions
1 tablespoon dry sherry
1/2 pound boneless skinless chicken breasts cubed 1/2 pieces

Yield: 

6 Servings

Method: 

Simmer all ingredients except the chicken in a saucepan over medium-low heat for about 10 minutes.

Add the chicken and simmer for 8 more minutes until chicken is cooked through.

This recipe yields 6 servings. Serving size: 1 cup.
