Chicken And Barley Salad

Ingredients: 

2 cups water
2/3 cup raw quick-cooking barley
2 cups diced cooked chicken
1/2 cup diced celery
1/2 cup chopped tomatoes
1/2 cup chopped red onion
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
5 lettuce leaves

Yield: 

5 Servings

Method: 

Bring water to a vigorous boil in a medium saucepan over high heat. Stir in barley; return to a boil. Reduce heat, cover, and simmer 8 to 10 minutes or until barley is tender, stirring occasionally.

Drain if necessary; cool. Toss barley with remaining ingredients except lettuce.

Serve on lettuce leaves.

This recipe yields 5 servings. Serving size: 1 cup.
