Barley Primavera

Ingredients: 

4 cups low-fat low sodium chicken broth divided
2 garlic cloves minced
1/2 cup minced red onion
1/2 cup diced carrot
1 cup pearled barley
1/2 cup diced zucchini
2 tablespoons minced Italian parsley
1 teaspoon olive oil
1 tablespoon lemon juice
Salt to taste
Freshly-ground black pepper to taste

Method: 

Heat 1/4 cup of the broth in a saucepan over medium-high heat. Add the garlic and onion and saut
