Apple Cheesecake Pie

Ingredients: 

2/3 cup Grape-Nuts cereal
2 large apples peeled, cored,
and thinly sliced
1 teaspoon grated lemon peel
1 teaspoon lemon juice
1/2 teaspoon cinnamon
1 1/2 cups part-skim ricotta cheese
8 package artificial sweetener
1 egg white plus
1 whole egg lightly beaten
= (or 1/4 cup egg substitute)
1 cup low-fat plain yogurt

Yield: 

8 Servings

Method: 

Sprinkle the cereal on the bottom of a deep 9-inch pie pan coated with nonstick vegetable cooking spray.

Arrange apples over the cereal and sprinkle with the lemon peel, lemon juice, and cinnamon.

Combine ricotta, artificial sweetener, egg, and yogurt, mixing with a spoon until smooth. Pour over the apples.

Bake at 350 degrees for 45 minutes or until apples are tender when pierced with a fork and the top is golden.

Serve warm or cold.

This recipe yields 8 servings. Serving size: 1 slice.
